  • 1 1/2 cups grated zucchini (excess moisture squeezed out)
  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 cup mini semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Lightly grease and flour a 9×5 inch (23×13 cm) loaf pan. Set it aside.
  3. Drain the grated zucchini by placing it on several layers of paper towels. Wrap the zucchini in the paper towels and firmly twist and squeeze to remove all excess moisture. This crucial step prevents a soggy bread!
  4. In a large mixing bowl, cream together the brown sugar and softened butter until the mixture is light and fluffy.
