  • 1 3/4 cups all-purpose flour
  • 1 tbsp baking powder
  • 2 cups milk
  • 2 eggs (lightly beaten)
  • 1/2 cup shredded sharp cheddar cheese
  • 5 strips bacon (cooked and crumbled)
  • 2 tbsp chopped chives

Instructions

  1. Melt butter in a medium skillet. Add potatoes and cook for 3-5 minutes until lightly browned. Season with salt and pepper, remove from heat and let cool slightly.
  2. In a large bowl, whisk together the flour and baking powder. Gradually whisk in the milk and lightly beaten eggs until the batter is smooth and free of lumps.
  3. Gently fold in the cooled potatoes, shredded sharp cheddar cheese, crumbled bacon, and chopped chives into the waffle batter until just combined. Be careful not to overmix.
