My original plan for this weekend was to whip up a batch of classic blueberry muffins. I mean, my local Target *always* has blueberries. It’s a staple! However, after two separate trips this week and even a visit to the farmer’s market, I was met with empty shelves. Seriously, what’s the deal? Did blueberry season abruptly end without anyone sending me a memo? I felt a pang of disappointment because I had promised the boys muffins, and they are remarkably good at holding me to my word.

Arriving home, a quick check of the fridge revealed a delightful alternative: an abundance of fresh strawberries! We always seem to have them on hand, and right now, our strawberry plants are in peak production – a true blessing. Every morning, my son Bryce and I head out to pick the freshest berries, and oh, the taste of a freshly picked strawberry is simply unparalleled! So, strawberry muffins it was. The good news? The boys absolutely *adored* them, and they made the perfect energizing breakfast before we embarked on a fun-filled day at Discovery Kingdom.

These Strawberry & Cream Cheese Muffins are a revelation, whether you’re new to baking with cream cheese or a seasoned pro. The addition of cream cheese transforms an ordinary muffin into something truly extraordinary, lending an incredibly moist, tender crumb and a subtle tang that perfectly complements the sweetness of the strawberries. The batter itself is a work of art – so gorgeous, in fact, that I had to gently swat away a few curious little fingers trying to sample it from the mixer bowl this morning! A crucial tip for success: after chopping your strawberries, let them rest on a paper towel for a few minutes. This simple step absorbs any excess moisture, preventing your muffins from becoming soggy and ensuring a perfectly textured result. Gently fold these beautiful berries into your velvety batter, and prepare for your home to be filled with the most amazing aroma as they bake.

For an extra touch of texture and sweetness, I love to sprinkle a pinch of raw sugar over the tops of the muffins just before they go into the oven. While it may not be highly visible after baking, it creates a wonderfully delicate, sweet crunch when you take that first delightful bite. These muffins are already perfectly sweet on their own, so much so that we often enjoy them without any butter or spread. However, let’s be honest, you can never truly go wrong by adding a pat of butter to a warm, fluffy muffin!

The secret to these incredibly fluffy and moist muffins lies in the combination of cake flour and the magical touch of cream cheese and butter. Cake flour, with its lower protein content, creates a softer, more tender crumb compared to all-purpose flour. But don’t worry if you only have all-purpose flour on hand; your muffins will still be delicious! The interplay of lemon juice and vanilla also enhances the vibrant flavor of the strawberries, creating a beautifully balanced taste profile that’s both refreshing and comforting. Each bite offers a burst of sweet, juicy strawberry, perfectly complemented by the rich, tangy base. These muffins aren’t just for breakfast; they make a fantastic snack, a delightful addition to brunch, or even a light dessert. They’re simple enough for a weekday morning but elegant enough for a special occasion. Plus, the delightful aroma that fills your kitchen while they bake is a treat in itself, promising a homemade goodness that’s hard to beat.

Servings: 16 muffins

Ingredients

  • 4 oz cream cheese, room temperature
  • 4 tbsp unsalted butter, room temperature
  • 1 tbsp lemon juice
  • 2 tsp vanilla extract
  • 2 large eggs, room temperature
  • 1/2 cup milk
  • 2 cup cake flour (all-purpose flour can be substituted)
  • 2/3 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cup chopped strawberries
  • Raw sugar for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line muffin tins with paper cupcake liners, or grease them thoroughly.
  3. In a large mixing bowl, beat together the softened cream cheese and butter until the mixture is light, fluffy, and completely smooth.
  4. Stir in the lemon juice and vanilla extract, continuing to beat until all ingredients are well combined.
  5. Add the milk and eggs, beating until the wet ingredients are thoroughly blended into the cream cheese mixture.
  6. In a separate small bowl, whisk together the dry ingredients: flour, granulated sugar, baking powder, baking soda, and salt.
  7. Gradually add the dry flour mixture to the wet cream cheese mixture, mixing on low speed until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  8. Gently fold in the chopped strawberries until evenly distributed throughout the batter. Remember to pat the strawberries dry before adding them to the batter.
  9. Scoop the batter into the prepared muffin tins, filling each cup about three-quarters full. If desired, sprinkle a little raw sugar on top of each muffin for a crunchy finish.
  10. Bake for 30 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  11. Let the muffins cool slightly in the tins before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
