- 3 cups granulated sugar
- 1/2 cup half and half
- 2 tbsp light corn syrup
- 8.25 ounce Dole crushed pineapple (juice and all)
- 3 tbsp butter
- 1 tsp pineapple extract or clear vanilla extract
- 1 cup white chocolate chips
- 7 oz marshmallow creme
Instructions
- Line a 9 x 5 inch loaf pan with non-stick foil. Lightly butter the foil. This prevents sticking and makes removal easy.
- In a heavy-bottomed 3-quart saucepan, combine the granulated sugar, half and half, light corn syrup, crushed pineapple (with its juice), and butter. Stir these ingredients together well to ensure everything is evenly distributed.
- Place the saucepan over medium-low heat. Bring the mixture to a full boil, stirring continuously until all the sugar has completely dissolved. This step is crucial for a smooth fudge texture.
- Continue cooking the mixture, stirring frequently to prevent scorching, until it reaches 236°F (113°C), which is the soft ball stage (this stage typically ranges from 234°F – 240°F). Using an accurate digital candy thermometer is highly recommended for precision.
- Once the desired temperature is reached, immediately remove the saucepan from the heat. Stir in your chosen extract – either pineapple for an intensified flavor or clear vanilla for a subtle complement.
- Stir the mixture vigorously for 3 minutes. During this time, the candy will start to thicken slightly, indicating it’s developing the correct texture.
- Add the white chocolate chips to the hot mixture. Continue stirring until the chips are entirely melted and fully combined, creating a smooth and luscious base.
- Finally, gently fold in the marshmallow creme until it is thoroughly incorporated into the fudge. This adds a wonderful creaminess and helps achieve that classic fudge consistency.
- Promptly pour the prepared fudge mixture into the foil-lined and buttered loaf pan. Spread it evenly using a spatula.
- Allow the fudge to cool completely to room temperature. This can take several hours. Do not rush this step.
- Once cooled, transfer the pan to the refrigerator and chill until the fudge is completely set, which typically takes at least 2 hours. For firmer fudge, an extended refrigeration period is beneficial.
- Once firm, lift the fudge out of the pan using the foil edges. Cut into desired pieces using a sharp knife. Store the finished pineapple fudge in an airtight container at room temperature, or in the refrigerator for a firmer texture and extended shelf life.
