Crafting the Perfect Bakery-Style M&M’s and Chocolate Chunk Cookies

There are moments when the craving for a perfect cookie becomes an all-consuming desire. Not just any cookie, but one that embodies the best qualities of a professional bakery creation: a slight rise, a beautifully golden exterior, and an interior that is both wonderfully soft and satisfyingly chewy. Achieving this elusive balance has been a personal baking quest for quite some time.

Just a few months ago, while engrossed in a detailed conversation about all things cookies with my siblings, Cliff and Melissa, I voiced this very dilemma. We delved into various baking methods and shared our favorite recipes, but I kept returning to my longing for that “bakery style” loft and height, without sacrificing the cherished softness and chewiness that makes a cookie truly comforting. It felt like a serious baking conundrum, one that many home bakers can surely relate to.

The Game-Changing Tip: Freezing Cookie Dough

My sister, Melissa, an undeniable baking expert whose wisdom I deeply respect, offered a simple yet revolutionary suggestion: freeze the cookie dough. Initially, I was skeptical. I regularly refrigerate my dough for hours, sometimes even overnight, thinking that was sufficient to achieve the desired texture. Could freezing truly make such a profound difference? Melissa, with her characteristic confidence, assured me it would. Trusting her seasoned expertise, I decided to give it a try. And I am so incredibly glad I did.

The results were nothing short of spectacular. The cookies emerged from the oven absolutely perfect, with a beautiful rise, golden edges, and that irresistibly soft and chewy center I had been dreaming of. I honestly couldn’t believe how flawless they were, which, of course, led to me enjoying far more than just one or two. I devoured them with pure delight, and I don’t regret a single bite. They were, without exaggeration, heavenly.

Why Freezing Cookie Dough Works Wonders

Freezing cookie dough for about an hour performs amazing feats for your baked goods. When you chill cookie dough, especially in the freezer, the butter within the dough solidifies significantly. This prevents the cookies from spreading too rapidly when they hit the heat of the oven. Instead of flattening out, they hold their shape, puffing up beautifully to create a thicker, chewier cookie with those coveted “bakery-style” edges and a soft, yielding interior. Freezing also allows the flavors to meld and deepen, resulting in a richer, more complex taste profile. You can freeze the dough for longer, even overnight, or store it for future baking sessions. For best results and uniform baking, I highly recommend using a cookie scoop to portion your dough. This ensures all your cookies are the same size, guaranteeing they bake evenly and are ready at precisely the same time, preventing any under or over-baked casualties.

Tips for Achieving Cookie Perfection

For an extra touch of visual appeal and flavor, feel free to add more M&M’s or chocolate chunks to the top of your cookies immediately after they come out of the oven. Gently press them into the warm, soft surface. This simple trick makes them look even more enticing and ensures every bite is loaded with deliciousness. After adding the toppings, allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This cooling process helps them set and firm up, ensuring they maintain their shape and chewy texture.

I recently made a batch of these cookies for my mother-in-law’s birthday party, and they were an absolute sensation – a HUGE HIT with everyone! Just as Melissa predicted, the freezing method delivered unparalleled results. I had to concede, “Yes, Melissa, you did tell me so. And you were absolutely right!”

This method has truly transformed my approach to cookie baking. It’s now my go-to technique, and I am absolutely loving the consistent, perfect results it yields. Say goodbye to flat, uninspiring cookies and hello to a batch of bakery-quality treats every single time.

Ingredients

  • 3/4 cup unsalted butter , room temperature
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg room temperature
  • 1 tbsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 11.5 oz semi-sweet chocolate chunks
  • 1 cup M&Ms plus more to top the cookie if desired

Instructions

  1. Line a small baking sheet with parchment paper. Set aside.
  2. In a large mixing bowl, cream together the softened butter and both sugars until light and fluffy. Beat in the egg and vanilla extract until thoroughly combined.
  3. In a separate small bowl, whisk together the flour, cornstarch, baking soda, and salt.
  4. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed just until combined. Be careful not to overmix.
  5. Gently fold in the chocolate chunks and M&M’s until evenly distributed throughout the dough.
  6. Using a cookie scoop (approximately 2 tablespoons in size) to ensure uniform cookies, scoop the dough and roll it into smooth balls.
  7. Place the cookie dough balls onto the prepared baking sheet. Cover the dough balls tightly with plastic wrap and freeze for at least one hour, or preferably overnight. If freezing overnight, let the dough balls sit at room temperature for about 10 minutes before baking. (For future convenience, you can also transfer the frozen dough balls to a freezer-safe ziploc bag and bake as needed.)
  8. Preheat your oven to 350°F (175°C).
  9. Arrange the frozen cookie dough balls on a parchment-lined baking sheet, spaced a few inches apart. Bake for 10-12 minutes, or until the edges are lightly golden and the centers appear slightly under-baked. This ensures a soft, chewy interior.
  10. Allow the cookies to cool on the baking sheet for several minutes before carefully transferring them to a wire cooling rack to cool completely.
  11. Store your delicious cookies in an airtight container at room temperature for up to a week to maintain their freshness and chewiness.

Notes

  • Storage: Keep these delightful cookies in an air-tight container at room temperature for up to a week to preserve their optimal texture and flavor.
  • Freezing Baked Cookies: If you wish to bake and freeze your cookies for later enjoyment, allow them to cool completely first. Then, transfer them to a freezer-safe bag or container, separating layers with parchment paper. They will maintain their quality in the freezer for about 2-3 months. When you’re ready to indulge, simply let them thaw at room temperature.
  • Make Ahead (Dough): This recipe is perfect for meal prepping! After preparing the cookie dough and shaping it into balls, you can store the raw dough in the freezer for an extended period, up to 4-6 months. This means fresh-baked cookies are just minutes away whenever a craving strikes.
