  • 8 oz Pillsbury Crescent Rolls (1 can)
  • 6 large eggs
  • 1/2 cup half and half
  • 1/2 cup ham (cooked and diced)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Remove crescent rolls from the can. Unroll the dough and cut each crescent roll triangle in half. Gently press each half into the bottom and up the sides of a standard muffin tin well, forming a cup. (You will end up with two extra crescent roll halves that you can either use for round two or just roll up, bake, and enjoy on their own!)
  3. In a medium bowl, whisk together the eggs and half and half until well combined. Stir in the diced ham, shredded cheese, cooked diced potatoes, and season generously with salt and pepper to taste.
  4. Carefully divide the egg mixture evenly among the crescent roll-lined wells of the muffin tin.
