  • 1 red onion thinly sliced
  • 1 yellow onion thinly sliced
  • 2 bunches green onions green party only, thinly sliced
  • ¾ cup balsamic vinegar
  • ¼ cup brown sugar packed
  • salt and pepper as desired
  • ¼ cup Ancho Steak Seasoning – see below

Ancho Steak Seasoning:

  • ¼ cup kosher salt or table salt
  • 3 tablespoons ground ancho chili powder
  • 2 tablespoons ground cumin
  • 2 tablespoons dried granulated garlic
  • 2 tablespoons coarse-grind black pepper
  • 2 tablespoons of sugar
  • 1 tablespoon ground thyme

Instructions

  1. Prepare the Caramelized Three-Onion Sauce: Heat olive oil in a large non-stick skillet over medium heat until shimmering. Add the thinly sliced red, yellow, and green onions. Cook and stir consistently for 8 to 10 minutes, or until the onions have softened and just begin to take on a light brown color.
  2. Reduce the heat to low, allowing the onions to slowly caramelize for about 12 minutes, stirring occasionally to prevent burning and ensure even browning. Increase the heat to medium-high, then stir in the balsamic vinegar. Cook for approximately 4 minutes, stirring occasionally, until the vinegar has reduced by half and thickened slightly. The exact grilling time will vary based on your grill’s heat and the thickness of the roast. For precision, remove the roast when an instant-read thermometer inserted into the thickest part of the beef registers 140°F (60°C) for medium-rare, or 155°F (68°C) for medium.
  6. Rest and Carve: Once removed from the grill, let the tri-tip roast rest on a cutting board, loosely tented with foil, for a minimum of 10 minutes. This crucial resting period allows the juices to redistribute throughout the meat, ensuring a tender and flavorful result. During this time, the internal temperature will continue to rise by about 5°F (3°C), reaching a final temperature of 145°F (63°C) for medium-rare, or 160°F (71°C) for medium. Carve the roast across the grain into thin slices. Serving against the grain is vital for optimal tenderness, especially with tri-tip.
