Ingredients

  • 5 lbs fresh tomatoes (see note below for using canned tomatoes)
  • 2 tbsp extra virgin olive oil
  • 1 large yellow onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, diced (optional)
  • 3 cloves of garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp Worcestershire sauce
  • 6 oz tomato paste
  • 2 tbsp chopped fresh basil
  • 2 bay leaves
  • 2 tbsp Italian seasoning
  • 1 tbsp sugar
  • 1 to 2 pounds lean ground beef, turkey, or Italian sausage (optional)

Instructions

  1. Bring a large pot of water to a boil.
  2. Fill a large bowl with ice water.
  3. Drop tomatoes 5-6 at a time into the boiling water for about 45 seconds. Immediately transfer to the ice bath. Repeat with all tomatoes.
  4. Carefully peel the skin off of the blanched tomatoes and gently squeeze out excess liquid and seeds. The skin should come off very easily.
  5. Heat olive oil in a medium saute pan over medium heat. Add the diced onion and bell peppers and sauté for 4 to 5 minutes until the onions are translucent. Stir in the minced garlic, salt, and pepper and cook for an additional minute until fragrant.
  6. Combine the prepared tomatoes, the sautéed onion mixture, Worcestershire sauce, tomato paste, fresh basil, bay leaves, Italian seasoning, and sugar in a large slow cooker. Stir well to combine all ingredients.
  7. If you are making a meat sauce, stir in the lean ground beef, turkey, or Italian sausage (uncooked) now.
  8. Place a folded paper towel between the lid and the insert of the slow cooker to absorb excess moisture, and cook on low for 6 to 8 hours or on high for 3 to 4 hours. Stir occasionally if desired. Remove bay leaves before serving.
