There’s something truly special about a homemade yeast roll – the soft, pillowy texture, the golden-brown crust, and the way it just melts in your mouth. For generations, yeast rolls have been a beloved tradition in my family, and the mere thought of them baking sends my senses into overdrive. The anticipation builds with every waft of that irresistible aroma, promising a delicious treat.

This year, I’m particularly excited to introduce a new family favorite that combines the classic comfort of yeast rolls with a festive twist: these incredible Cranberry Yeast Rolls. They’re so easy to make, yet they taste like they took hours of effort. I know my family, like many others, finds it impossible to resist the allure of warm, fluffy bread, and these cranberry-infused beauties are destined to become a holiday highlight.

Effortless Elegance for Your Holiday Table

One of the best features of this recipe is its surprising simplicity. Unlike some yeast bread recipes that demand extensive proofing times, these Cranberry Yeast Rolls require only a brief 30-minute rise. This significantly cuts down on kitchen time, allowing you to focus on other aspects of your holiday preparations or simply relax and enjoy the festive atmosphere. Imagine having freshly baked, aromatic rolls ready in just over an hour!

The convenience doesn’t stop there. These rolls are wonderfully forgiving and hold up beautifully, making them an excellent candidate for advance preparation. You can bake them the day before your big event and simply warm them in the oven for about 3 minutes just before serving. They’ll emerge perfectly soft and fragrant, as if they just came out of the oven. The bright, jewel-toned cranberries peeking through the golden crust add a stunning pop of color, making these rolls not only delicious but also visually appealing and incredibly hard to resist. They bring a vibrant touch to any holiday spread, contrasting beautifully with the traditional browns and greens of a festive meal.

This recipe yields approximately 24 rolls, providing a generous batch perfect for larger gatherings. The size is ideal for holiday meals, where plates are often overflowing with a variety of delectable dishes. Each roll offers a satisfying bite without being overly filling, allowing guests to savor all the other wonderful flavors of the feast. If you prefer larger rolls, you can adjust the yield to about 18, but I find the smaller size perfectly charming and practical for a diverse holiday spread.

Ingredients

  • 4 cups all-purpose flour (spooned and leveled)
  • 4 1/2 tsp rapid rise yeast (2 .25 oz packets)
  • 4 tsp pumpkin pie spice
  • 1 cup chopped fresh cranberries
  • 1 cup half-and-half
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 8 tbsp unsalted butter (room temperature, divided)
  • 2 eggs (room temperature, beaten)

Instructions

  1. Combine flour, yeast, and pumpkin pie spice in a large mixing bowl.
  2. Toss cranberries in the flour mixture, ensuring they are lightly coated. Set aside.
  3. In a small saucepan, combine half-and-half, granulated sugar, salt, and 4 tablespoons of butter. Heat over low heat, stirring occasionally, until the butter has fully melted and the mixture reaches a temperature of 125°F (52°C). This warm liquid is crucial for activating the yeast.
  4. Pour the warm half-and-half mixture into the large mixing bowl with the flour mixture. Stir in the beaten eggs until a cohesive dough ball begins to form.
  5. Lightly flour a clean, large surface. Transfer the dough onto this surface and knead it for about 5 minutes. Continue kneading until the dough becomes smooth and elastic, indicating proper gluten development.
  6. Cover the kneaded dough with a clean kitchen towel or plastic wrap and let it rest in a warm spot for 10 minutes. This brief rest period helps the gluten relax, making the dough easier to handle.
  7. While the dough rests, prepare two baking sheets by lining them with parchment paper. This prevents sticking and makes for easy cleanup.
  8. After resting, divide the dough in half, and then divide each half in half again. From each of these four quarters of dough, shape 6 small, uniform balls, resulting in 24 rolls in total. Place these dough balls on the prepared baking sheets, leaving some space between each.
  9. Cover the shaped rolls and let them rise in a warm place for 30 minutes. During this time, they should visibly increase in size and become puffy.
  10. Preheat your oven to 400°F (200°C). Melt the remaining 4 tablespoons of butter and gently brush it over the tops of the risen rolls. This will contribute to their golden-brown color and tender crust.
  11. Bake the rolls for 15 minutes, or until they achieve a beautiful golden-brown color. Once removed from the oven, immediately brush more melted butter on top of the hot rolls for an extra touch of flavor and a soft finish.
  12. Store any leftover rolls in a large plastic bag to maintain their freshness until you are ready to serve them. To rewarm, simply pop them into a 350°F (175°C) oven for a few minutes. They can also be enjoyed at room temperature.
