- 8 oz jar sun-dried tomatoes, drained and coarsely chopped
- 15 oz jar marinated artichokes, drained and quartered
- 8 oz fresh mozzarella pearls (bocconcini), drained, quartered or halved if larger
- 1/2 red onion, very thinly sliced
- 1 pint cherry or grape tomatoes, halved
For the Zesty Lemon Herb Dressing
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp fresh squeezed lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley flakes
- 1 tsp dried oregano
- 1 tsp Dijon mustard
- Salt and freshly ground black pepper to taste
