  • 16.9 oz Dr Pepper (1 bottle)

For the Dr Pepper Barbecue Sauce:

  • 1 tbsp Olive Oil
  • 1 tbsp Butter
  • 1 Medium Onion, diced
  • 2 Garlic Cloves, diced
  • 16.9 oz Dr Pepper (1 bottle)
  • 1 cup Ketchup
  • 6 oz Tomato Paste
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Mustard (Dijon or yellow)
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Chili Powder
  • 1 tsp Fresh Ground Black Pepper
  • 1 tsp Salt (smoked sea salt is excellent if available)

Instructions

Preparing and Grilling the Brisket:

  1. Begin by trimming most of the excess fat from the brisket, aiming to leave about 1/4 inch to ensure the brisket remains incredibly juicy and flavorful during the long cook. Generously season both sides of the brisket with the salt and pepper, or apply your favorite dry rub. (For a fantastic flavor boost, consider trying some of the new rubs from KC Masterpiece – they are truly fabulous!)
  2. For easier handling on the grill and in the foil pan, cut the brisket in half. This makes flipping and transferring much more manageable.
  3. Preheat your grill to high heat. Sear the brisket halves directly over the high heat for 4 to 5 minutes per side. This step is crucial for developing a beautiful, dark crust and char marks, which add a significant layer of smoky flavor and texture.
  4. Once both sides are nicely seared and charred, remove the brisket halves from the direct heat of the grill.
  5. Place each half of the seared brisket into a separate deep foil pan. Ensure the foil pan is deep enough to allow for proper airflow around the meat and liquid.
  6. Pour half of the 16.9 oz bottle of Dr Pepper into each foil pan, surrounding the brisket with the soda. Cover each pan tightly with heavy-duty foil, crimping the edges to create a secure seal that traps steam and moisture.
  7. Return the covered foil pans to the grill, setting the grill to maintain a consistent low heat, ideally around 225°F (107°C). Cook the brisket for approximately 2.5 to 3.5 hours. The exact cooking time will vary depending on the initial size and thickness of your brisket. You’ll know it’s done when the brisket is incredibly tender; a small fork inserted into the thickest part should twist easily with little resistance. Don’t worry too much about direct versus indirect heat at this stage, as the foil pan largely manages that environment.

Making the Dr Pepper Barbecue Sauce:

  1. In a medium-sized, heavy-bottomed saucepan, heat the olive oil and butter over medium-low heat. Add the diced onion and sauté until it becomes soft, translucent, and fragrant, typically about 5-7 minutes.
  2. Stir in the diced garlic and continue to sauté for an additional minute until fragrant, being careful not to burn it.
  3. Add the remaining sauce ingredients to the saucepan: the second 16.9 oz bottle of Dr Pepper, ketchup, tomato paste, apple cider vinegar, mustard, Worcestershire sauce, chili powder, fresh ground black pepper, and salt. Stir everything thoroughly until all ingredients are well combined and the mixture is smooth.
  4. Bring the sauce to a gentle simmer over medium-low heat. Continue to simmer for 30 to 45 minutes, stirring occasionally, until the sauce reaches your desired consistency – it should be thick enough to coat the back of a spoon.
  5. Remove the sauce from the heat and allow it to cool slightly. Store it in an airtight container, such as Glad Matchware, and refrigerate until you are ready to use it.
