The Ultimate Sausage Stuffing Recipe: A Holiday Tradition
When the holiday season rolls around, few dishes evoke as much warmth and nostalgia as a perfectly made stuffing. For many, including me, it’s the undisputed star of the Thanksgiving table, often rivaling even the magnificent turkey itself. The rich, aromatic flavors, the delightful blend of textures – it’s a symphony for the senses. While the slow-cooker turkey breast, creamy mashed potatoes, savory turkey gravy, crisp green beans, and a selection of homemade rolls are all essential components of our family’s holiday feast, there’s just something extra special about a truly exceptional stuffing.
Indeed, it’s hard to pick a single favorite when every dish contributes to such a grand culinary celebration. But if pressed, a well-crafted stuffing would certainly be at the top of my list. We love to indulge, so our table is always graced with a variety of delectable sides, including these homemade dinner rolls and my mom’s famous buttery golden crescent rolls. It’s all part of the joy of the holiday season, a time for abundance and sharing delicious food with loved ones.

Why This Sausage Stuffing Will Be Your New Holiday Favorite
This particular sausage stuffing recipe holds a special place in our hearts, stemming from a Thanksgiving tradition started by my brother-in-law. It was through his recipe that I first discovered the incredible depth and flavor that sausage brings to a classic stuffing. The moment I tasted it, I knew I had found something truly remarkable – a revelation that transformed my understanding of what stuffing could be. Over the years, I’ve lovingly adapted that initial inspiration, refining it to include the perfect balance of sweet, tart, and savory notes. My additions of dried cranberries and crisp apples, along with an generous array of fresh herbs, elevate this recipe to a new level of culinary excellence, making it an indispensable part of our holiday spread.
What makes this easy stuffing recipe truly exceptional is its remarkable versatility. Whether you prefer a looser, more bread-like texture or a denser, moister consistency, this recipe can be easily adapted to suit your preference, ensuring a perfect stuffing every time.
Stuffing vs. Dressing: Unraveling the Holiday Debate
Ah, the age-old holiday question: Is it stuffing or is it dressing? The culinary world often draws a distinction based on cooking method. Generally speaking, “stuffing” refers to a mixture that is cooked inside the cavity of the bird (like a turkey or chicken), absorbing its juices and flavors. “Dressing,” on the other hand, is typically baked in a separate dish outside the bird. This difference often leads to variations in texture; stuffing from inside the bird tends to be moister, while dressing can achieve a delightful crispness on top.
However, this distinction isn’t universally observed, especially across different regions and households. In many parts of the country, including my own, the term “stuffing” is used interchangeably, regardless of whether it’s cooked inside the turkey or in a casserole dish. It’s a culinary convention passed down through generations, often shaped by family tradition rather than strict definition. Ultimately, the most important thing is the delicious result, not the nomenclature. So, feel free to call it whatever you like – whether it’s stuffing or dressing, this recipe promises to deliver an unforgettable side dish to your holiday table!

The Irresistible Flavor Profile: Key Ingredients That Shine
This stuffing recipe is generously loaded with incredible flavors and textures. The tartness of Granny Smith apples, the aromatic freshness of rosemary, thyme, and sage, combined with savory sausage and sweet-tart cranberries, creates a truly harmonious and unforgettable side dish!
Mastering the Bread Base: Toasted Cubes for Perfect Texture
Every great stuffing begins with the right bread base. For this recipe, we start with generously cubed bread, ideally a day or two old to ensure it’s slightly dry. I personally love using a combination of sourdough and ciabatta for their distinct flavors and textures, but you can certainly use any type of sturdy bread you prefer, such as French bread or even a good quality sandwich loaf. The key is to have bread that can absorb all the rich liquids without turning mushy. If you’re short on time, don’t hesitate to use a bag of pre-cubed stuffing bread from the store – it’s a convenient shortcut that still yields delicious results.
The magic happens when these bread cubes are toasted in the oven. This crucial step dries them out further and creates a slightly crunchy exterior. Why is this important? Because dried bread acts like a sponge, allowing it to thoroughly soak up the flavorful turkey or chicken stock, melted butter, and all the wonderful juices and aromas from the sausage and herbs. This absorption is what gives stuffing its characteristic moist interior and prevents it from becoming soggy. Toasting also adds a subtle nutty depth to the bread, enhancing the overall flavor of the stuffing.
Can I Use Store-Bought Stuffing Mix for a Quicker Prep?
Absolutely! While making stuffing from scratch is incredibly rewarding, we understand that holiday preparations can be hectic. If you’re looking to save some precious time without sacrificing flavor, a good quality store-bought stuffing mix can be a fantastic substitute. Simply skip the initial bread toasting step of the recipe and proceed as directed with the rest of the ingredients. The convenience of a pre-seasoned mix, combined with the fresh additions of sausage, apples, and herbs, will still result in a wonderfully flavorful dish that tastes homemade.

The Binding Power of Eggs: Achieving Your Desired Stuffing Consistency
Eggs play a vital role in achieving the desired texture for your stuffing. I typically incorporate two lightly beaten eggs into this recipe, as they act as a binder, helping to hold the stuffing together for a cohesive and slightly denser consistency. This results in stuffing that can be neatly scooped and retains its shape beautifully. However, if you prefer a looser, more crumbly stuffing – one that’s perhaps a bit more rustic and free-flowing – you can easily reduce the amount to just one egg. The day I photographed this recipe, I actually used only one egg, which perfectly illustrates the slightly looser texture it creates. Experiment with the egg quantity to find the perfect binding and moisture level that suits your personal preference.

Essential Ingredients for Your Ultimate Sausage Stuffing
Crafting the perfect sausage stuffing is all about selecting the right components. Here’s a breakdown of the key ingredients and why they are indispensable for a truly flavorful and satisfying dish:
- Bread: The foundation of any great stuffing. Whether you opt for hearty ciabatta, tangy sourdough, classic French bread, or even a pre-packaged stuffing mix, ensure it’s sturdy enough to absorb moisture without becoming mushy. Day-old bread is ideal for cubing and toasting.
- Fresh Herbs: This is where the magic happens! A generous medley of fresh rosemary, thyme, sage, and parsley infuses the stuffing with an unparalleled aromatic depth that dried herbs simply cannot replicate. Fresh herbs are crucial for that vibrant, holiday flavor.
- Granny Smith Apple: The inclusion of a tart Granny Smith apple provides a wonderful contrast to the savory sausage and sweet cranberries. Its crisp texture adds a refreshing bite, while its acidity brightens the overall flavor profile. A Gala apple could also work for a slightly sweeter note.
- Turkey or Chicken Stock/Broth: The liquid base that moistens the bread and carries all the delightful flavors. Low-sodium options are recommended to control the saltiness of the dish. Use whatever you have on hand – turkey stock is excellent for Thanksgiving!
- Dried Cranberries: These jewel-toned berries offer bursts of sweet-tart flavor, adding a festive touch and a chewy texture that complements the other ingredients beautifully. Adjust the quantity to your liking; a cup is usually perfect for a balanced taste.
- Onion and Celery: The classic aromatic duo, often referred to as the “holy trinity” in cooking. Sautéing diced onion and chopped celery creates the foundational savory flavor and a tender texture that is essential to any good stuffing.
- Eggs: As discussed, eggs are crucial for binding the stuffing. Use one egg for a looser, more crumbly stuffing, or two eggs for a firmer, more cohesive dish that holds its shape. Lightly beaten, they integrate seamlessly into the mixture.
- Breakfast Sausage: The star of this recipe! Sage-flavored breakfast sausage is highly recommended for its savory, herbaceous notes that pair perfectly with the other ingredients. Browning the sausage first renders out fat and develops incredible flavor.
- Butter: Melted butter adds richness and helps crisp up the stuffing’s exterior. Divided for sautéing and drizzling, it ensures maximum flavor and moisture distribution.

Ingredients
- 8 to 10 cups bread, cubed (Ciabatta, Sourdough, French, etc.)
- 1 lb breakfast sausage (sage flavored if you can find it)
- 1 onion, diced
- 1 cup celery, chopped
- 1.5 tbsp fresh rosemary, chopped
- 1.5 tbsp fresh sage, chopped
- 2 tsp fresh thyme, chopped
- Salt and pepper to taste
- 1 Granny Smith apple, chopped
- 1 cup dried cranberries
- 1 to 2 eggs, lightly beaten
- 1/3 cup fresh parsley, chopped
- 2 1/2 to 3 1/2 cups low sodium turkey or chicken stock/broth
- 8 tbsp butter, melted, divided
Instructions
- Preheat oven to 350°F (175°C). Place cubed bread on a large baking sheet and bake for 5 to 10 minutes until dried out and lightly toasted. Set aside.
- In a large skillet over medium-high heat, brown the breakfast sausage, breaking it up with a spoon. Once cooked through, remove the sausage from the skillet, leaving about one tablespoon of grease behind.
- Add the diced onion, chopped celery, fresh rosemary, fresh sage, fresh thyme, and a pinch of salt and pepper to the skillet. Cook over medium heat, stirring frequently, until the onions are translucent and softened, about 5-7 minutes.
- In a very large mixing bowl, combine the dried bread cubes, cooked sausage, sautéed onion and herb mixture, chopped apple, dried cranberries, lightly beaten eggs, 2 cups of the stock or broth, and 4 tablespoons of the melted butter. Mix gently until all ingredients are well combined and the bread has started to absorb the liquids.
- Transfer the stuffing mixture into a greased 9×13 inch baking dish and press down lightly to even it out. Cover the baking dish tightly with aluminum foil.
- Bake in the preheated oven for 45 minutes.
- Remove the stuffing from the oven and carefully remove the foil. Check the consistency of the stuffing; if it appears too dry for your liking, gradually add more stock (up to 1 1/2 additional cups) until it reaches your desired moisture level. Drizzle the top with the remaining 4 tablespoons of melted butter.
- Return the uncovered stuffing to the oven and continue to bake for an additional 15 to 25 minutes, or until the top is beautifully golden brown and slightly crispy.
- Garnish with additional fresh herbs, such as chopped parsley or sage, if desired, and serve immediately for the best flavor and texture.

Tips for the Perfect Sausage Stuffing
- Don’t Skimp on Fresh Herbs: While dried herbs can be used in a pinch, fresh rosemary, sage, and thyme truly make this stuffing shine. Their vibrant flavors are essential for an authentic holiday taste.
- Achieve the Right Bread Consistency: Whether you’re using homemade bread or store-bought cubes, ensure the bread is adequately dried out. This prevents a soggy stuffing and allows for maximum flavor absorption. You can toast it in the oven or leave it out uncovered overnight.
- Adjust Moisture to Your Liking: The amount of stock can be adjusted based on your preference for a moister or drier stuffing. Start with the lower amount and add more gradually during the baking process if needed.
- Customize with Add-ins: While apples and cranberries are fantastic, feel free to experiment! Pears, dried apricots, pecans, walnuts, or even mushrooms can add unique twists.
- Consider the Sausage Flavor: Sage-flavored breakfast sausage is ideal, but spicy Italian sausage can add a wonderful kick if you enjoy a bit of heat. Ensure it’s browned well for maximum flavor development.
- Browning for Texture: Don’t skip the uncovered baking step. This is crucial for developing that irresistible golden-brown crust and slightly crispy edges.
Make Ahead & Storage Instructions
Holiday cooking can be stressful, but this sausage stuffing recipe is perfect for preparing in advance, saving you time and effort on the big day.
- Make Ahead: You can prepare the stuffing mixture (combining all ingredients except for the final drizzle of butter) up to 1-2 days in advance. Cover the baking dish tightly with plastic wrap or foil and refrigerate. On baking day, let it come to room temperature for about 30 minutes before baking as directed, adding a few extra minutes to the covered baking time if still very cold.
- Storage: Leftover stuffing should be stored in an airtight container in the refrigerator for up to 3-4 days.
- Reheating: To reheat, place individual portions in the microwave until warm through, or cover a larger dish with foil and reheat in a 300°F (150°C) oven until heated through, about 20-30 minutes. For a crispy top, remove the foil for the last 5-10 minutes.
- Freezing: Cooked stuffing freezes beautifully! Allow it to cool completely, then transfer to a freezer-safe airtight container or freezer bags. It can be frozen for up to 3 months. Thaw in the refrigerator overnight before reheating.

This savory sausage, cranberry, and apple stuffing is incredibly versatile and pairs wonderfully with a variety of holiday dishes and beyond. Here are some ideas to make your meal truly unforgettable:
