  • 8 tbsp olive oil
  • 4 tsp kosher salt
  • 8 oz shredded cheese (Mexican blend recommended)
  • 4 oz sour cream
  • 4 slices bacon (cooked and crumbled)
  • 2 green onions (thinly sliced)

Instructions

  1. Preheat your grill to a steady medium-high heat, aiming for a temperature between 350°F and 400°F. This ensures the potatoes cook evenly without burning.
  2. Thoroughly scrub each russet potato under cold running water to remove any dirt. Since we’ll be enjoying the skins, cleanliness is important.
  3. Using a fork, pierce the potatoes several times all over. This allows steam to escape during cooking and prevents them from bursting.
