The Irresistible Allure of Chocolate and Peanut Butter

It feels like an eternity since we last celebrated the glorious combination of chocolate and Reese’s peanut butter. For any true dessert enthusiast, the pairing of rich, sweet chocolate with savory, creamy peanut butter is nothing short of culinary magic. It’s a flavor symphony that hits all the right notes, creating a balanced and utterly satisfying treat. Here at Mom On Timeout, our pantry is perpetually overflowing with an assortment of Reese’s delights: from Reese’s Pieces and Minis to Miniatures, classic Peanut Butter Cups, and, of course, those essential Reese’s PB Baking Chips. Because, let’s be honest, you can never have too much Reese’s goodness on hand!

A Delicious Inspiration: The Story Behind These Stuffed Cookies

Just last week, my husband, Chris, was tasked with bringing a dessert to another one of his work BBQs. Yes, you heard that right – these folks really know how to enjoy themselves! And with Sacramento’s beautiful spring weather gracing us with temperatures in the 80s, who can blame them for wanting to celebrate outdoors? Spring is a fleeting joy in our part of California, a brief window of warm days and pleasantly cool nights before the scorching 100-degree summer heat settles in, making any outdoor activity feel like a marathon. So, we make the most of every opportunity to bask in the pleasant climate.

Chris’s request was simple yet timeless: chocolate chip cookies. Naturally, he wanted them made using our absolute go-to giant chewy chocolate chip cookie recipe. I was more than happy to oblige, but a mischievous thought sparked in my mind – a small, yet significant, enhancement. I was seized by an overwhelming desire to “stuff” them. And when it comes to stuffing a cookie, my philosophy is clear: go big or go home. Why settle for ordinary when you can create extraordinary?

The Revelation: A New Favorite Cookie is Born

And so, these magnificent, giant, chewy chocolate chip cookies were born, each lovingly wrapped around a snack-sized Reese’s Peanut Butter Cup. Let me tell you, dear readers, this was more than just an adjustment; it was a revelation. I have officially found a new favorite cookie, and I suspect you will too once you try them.

Imagine this: fresh from the oven, still warm and wonderfully soft, these cookies are pure bliss. The edges boast a delicate crispness that gives way to an unbelievably soft, chewy interior. Each bite is a symphony of classic chocolate chip cookie perfection, a moment of pure culinary delight. But then, as you savor the rich flavors, you hit the jackpot – the warm, melted, utterly divine Reese’s Peanut Butter Cup hidden within. It’s a delightful surprise, a gooey, sweet, and salty burst that perfectly complements the cookie dough. Can you honestly think of a more delightful surprise nestled inside a cookie?

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp corn starch
  • 1 tbsp vanilla extract
  • 3/4 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 cup white granulated sugar
  • 1 large egg plus 1 large egg yolk, at room temperature
  • 1 1/2 cups semi-sweet chocolate chips (or milk chocolate chips, or a combination)
  • 12 snack size Reese’s Peanut Butter Cups, unwrapped

Instructions

  1. In a medium bowl, combine the dry ingredients: all-purpose flour, baking soda, salt, and corn starch. Sift them together to ensure no lumps and even distribution.
  2. In a large mixing bowl, cream together the melted unsalted butter with both the brown sugar and white granulated sugar until the mixture is light and fluffy. This step is crucial for the chewy texture of the cookies.
  3. Beat in the vanilla extract until fully incorporated. Then, add the room temperature egg and the additional egg yolk, continuing to beat the mixture until it is well combined, pale, and creamy.
  4. Gradually add the sifted dry ingredients to the wet mixture. Mix on low speed, just until everything is combined and no streaks of flour remain. Be careful not to overmix, as this can lead to tough cookies.
  5. Gently fold in the chocolate chips (semi-sweet, milk chocolate, or a blend of your favorites) until they are evenly distributed throughout the dough.
  6. Take approximately 1/4 cup of cookie dough and flatten it in your palm. Place one unwrapped Reese’s Peanut Butter Cup in the center. Carefully wrap the dough around the peanut butter cup, ensuring all edges are sealed, creating a perfectly encased cookie ball.
  7. Repeat this process with the remaining dough and Reese’s Peanut Butter Cups until you have 12 stuffed cookie dough balls.
  8. Arrange the cookie dough balls on a parchment-lined baking sheet. Refrigerate them for 20-30 minutes. Chilling the dough helps prevent the cookies from spreading too much during baking and allows the flavors to meld.
  9. While the cookies are chilling, preheat your oven to 325 degrees Fahrenheit (160 degrees Celsius).
  10. Once chilled, space the cookies about 3 inches apart on the prepared baking sheet to allow for spreading. Bake for 15 to 17 minutes.
  11. The cookies are done when their edges are beautifully golden brown, and the centers still look slightly soft. This ensures a perfectly chewy cookie. Let the cookies cool on the baking sheet for a few minutes before carefully transferring them to a wire rack to finish cooling completely. This helps them set and prevents them from breaking.
  12. Serve warm for the ultimate gooey Reese’s experience, and enjoy every single bite!

Tips for Perfect Reese’s Stuffed Cookies Every Time

  • **Quality Ingredients:** Starting with good quality butter, fresh eggs, and your favorite chocolate chips will make a noticeable difference in the final taste and texture of your cookies.
  • **Don’t Skimp on Chilling:** The refrigeration step is essential. It solidifies the butter, which helps prevent the cookies from spreading too much in the oven, ensuring they maintain their thick, chewy structure. It also gives the flavors time to develop, resulting in a richer taste.
  • **Sealing is Key:** When wrapping the dough around the Reese’s cup, make sure it’s completely sealed. Any gaps can cause the peanut butter to leak out during baking.
  • **Room Temperature Eggs:** Using room temperature eggs helps them incorporate more smoothly into the butter and sugar mixture, creating a more cohesive dough.
  • **Watch Your Oven:** Ovens can vary, so keep an eye on your cookies during the last few minutes of baking. They’re done when the edges are golden, and the centers are still slightly soft. They will continue to set as they cool.
  • **Snack Size vs. Miniature:** We recommend using snack-size Reese’s cups for these giant cookies. Miniature ones might get lost, and full-size ones could be too large and harder to encase perfectly.

Serving Suggestions & Variations

These Reese’s Stuffed Giant Chewy Chocolate Chip Cookies are absolutely divine on their own, especially when warm, allowing that peanut butter core to be perfectly gooey. But why stop there?

  • **With Milk:** A tall, cold glass of milk is the classic accompaniment to any chocolate chip cookie, and these are no exception.
  • **A La Mode:** Serve a warm cookie with a scoop of vanilla bean ice cream for an indulgent dessert experience. The contrast of warm cookie and cold ice cream is heavenly.
  • **For a Crowd:** These cookies are perfect for potlucks, parties, or as a special treat for family gatherings. They’re always a showstopper!
  • **Spice It Up:** Add a pinch of cinnamon or a dash of espresso powder to your cookie dough to enhance the chocolate flavor.
  • **Mix Up the Chips:** Instead of just semi-sweet, try a mix of dark chocolate, milk chocolate, or even white chocolate chips for different flavor profiles.
  • **Other Stuffings:** While Reese’s is king here, feel free to experiment with other candies like Rolos (for caramel lovers), Snickers (for a nutty caramel surprise), or even mini marshmallows for a s’mores-like twist.
