  • 3 tbsp sugar (for crust)
  • 3 tbsp butter, melted
  • 12 miniature Reese’s Peanut Butter Cups
  • 16 oz cream cheese, softened (light cream cheese can be used)
  • 1 cup sugar (for filling)
  • ¼ cup all-purpose flour
  • 2 eggs, room temperature
  • 2 tsp vanilla extract
  • ½ cup Reese’s Peanut Butter chips
  • ½ cup chocolate chips
  • 2 tsp shortening, divided

  4. In a large bowl, beat the cream cheese until nice and fluffy. I use light cream cheese for a slightly less indulgent option, but regular cream cheese works beautifully too!
  5. Add in the remaining sugar, flour, and vanilla extract, continuing to beat until well combined and smooth.
  6. Add in the eggs one at a time, beating on low speed until each is just incorporated. Be careful not to overmix.
  7. Spoon the cream cheese mixture over the Reese’s Peanut Butter Cups, evenly dividing the mixture among the 12 cups. I use about ¼ cup of the mixture for each. Bake for approximately 20-25 minutes until the cheesecakes are set and the edges are lightly golden.
