If you’ve ever gazed at pictures of vibrant, layered gelatin and wondered how to make rainbow Jello yourself, you’re in the perfect spot! There’s an undeniable magic to these layered Jello creations. They transform simple ingredients into a playful, edible work of art. The beauty of this easy Jello dessert also lies in its adaptability. You have complete freedom to select the colors and flavors that best suit your occasion or personal preference. Rainbow Jello Cubes

Course: Snack, Dessert

Cuisine: American

Keyword: Jello Cubes, Rainbow Jello, Layered Jello

Prep Time: 2 hours

Chill Time: 2 hours (plus setting time for layers)

Servings: 117 cubes (approx.)

Author: Trish – Mom On Timeout

Ingredients

  • 4 packages (3 ounces each) assorted flavored gelatin (choose your favorite colors!)
  • 1.5 oz unflavored gelatin (divided)
  • 5-3/4 cups boiling water (divided)
  • 14 oz sweetened condensed milk
  • 1/4 cup cold water

Instructions

  1. In a small bowl, combine one package of your chosen flavored gelatin with one envelope of unflavored gelatin. Stir in 1 cup of boiling water until all the gelatin crystals are completely dissolved. Let this mixture cool slightly for 3-5 minutes.
  2. Carefully pour the cooled gelatin mixture into a 13×9-inch baking dish that has been lightly coated with cooking spray.
  3. Refrigerate this first layer until it is set but not completely firm. This usually takes about 20 minutes. You want it firm enough to hold the next layer without mixing, but still slightly pliable.
  4. While the first layer is chilling, prepare your creamy white layer. In a separate small bowl, combine the sweetened condensed milk with 1 cup of boiling water, stirring until well blended.
  5. In another small bowl, sprinkle two envelopes of unflavored gelatin over 1/4 cup of cold water. Let it stand for about 1 minute to bloom. Then, stir in 3/4 cup of boiling water until the gelatin is fully dissolved. Add this dissolved gelatin to the sweetened condensed milk mixture and stir thoroughly.
  6. Once the first flavored layer in your dish is set, gently spoon 1 cup of the creamy gelatin mixture over it. Be very careful not to disturb the layer beneath.
  7. Return the dish to the refrigerator and chill until the creamy layer is set but not firm, approximately 25 minutes.
  8. Repeat steps 1-3 and then steps 5-6 twice more, alternating between flavored gelatin layers and creamy white gelatin layers. Make sure to let each flavored gelatin mixture cool slightly (step 1) before spooning it over the previous layer. This crucial step helps prevent the colors from bleeding and keeps your layers distinct and “pure.”
  9. Always ensure each layer is set but not overly firm before adding the next one. This creates the best texture and allows for easy cutting later.
  10. After you’ve completed all your alternating layers, make the final flavored gelatin layer following step 1, and gently spoon it over the top.
  11. Once all layers are complete, refrigerate the entire dish for at least 2 hours (or preferably longer, even overnight) until completely firm.
  12. When ready to serve, cut the rainbow Jello into 1-inch squares or your desired shapes. Serve chilled and enjoy the colorful delight!

Notes

This recipe is adapted from a classic found on Taste of Home. For best results, ensure your boiling water is truly boiling to dissolve gelatin fully, and always allow gelatin layers to set properly for clear, distinct lines.
