- 1 1/2 cups applesauce (natural, no sugar added recommended)

- 2 envelopes unflavored gelatin (.25 oz each)
- 1 tsp lemon juice (bottled works perfectly)
Instructions
- Lightly coat a 9×13 baking dish with cooking spray. Place it in the refrigerator to chill while you prepare the mixture. A cold dish helps the mixture set quickly and evenly.
- In a large saucepan, combine 2 cups of the sugar, applesauce, Jell-O powder, unflavored gelatin, and lemon juice. Let this mixture stand for approximately 1 minute to allow the gelatin to soften slightly.
- Bring the mixture to a rolling boil over medium heat, stirring constantly to prevent sticking and ensure all ingredients are well combined. Boil for exactly 1 minute, maintaining constant stirring.
- Immediately and carefully pour the hot mixture into your prepared cold baking dish. The cold dish helps in the setting process.
- Refrigerate the dish until the gumdrop mixture is completely firm. This usually takes about three hours, but it’s best to check for firmness.
- Once firm, gently loosen the sides of the gelatin with a spatula and invert it onto a cutting board or a piece of waxed paper that has been generously sprinkled with sugar. The sugar layer is crucial to prevent sticking.
