Nana’s Famous Green Bean Recipe: A Culinary Legacy
My Nana was more than just a grandmother; she was my first culinary mentor and biggest supporter in the kitchen. Almost every day after school, I would rush to her house, eager to create something delicious together. While many of our adventures involved chocolate – a testament to her equally strong sweet tooth – some of my most profound lessons came from her savory creations. This green bean recipe, steeped in tradition and bursting with flavor, is a prime example of her simple genius.
In the whirlwind of developing new recipes, I sometimes forget to share the foundational family dishes that truly shaped my love for cooking. I’ve had the pleasure of sharing her To-Die-For Carrot Cake, her irresistible Chocolate Covered Peanut Butter Crunch Balls, and her comforting Sausage Gravy. Today, I’m thrilled to finally unveil another masterpiece: Nana’s famous green beans with bacon. This dish holds a truly special place in my heart, a symbol of family, comfort, and timeless flavor.
Green Beans with Bacon: The Ultimate Comfort Food Side Dish
Nana would lovingly prepare these mouth-watering green beans for all sorts of special occasions. From holiday dinners to birthday celebrations and casual Sunday lunches, their presence on the table always elevated the meal. What she might not have realized then was how much more special those occasions became for all of us, simply by having her famous green beans on the menu. The aroma filling the kitchen, the shared anticipation, and the pure joy of that first bite—these are the memories that linger, intrinsically linked to this incredible side dish.

Fresh Green Bean Recipes from the Garden
Every summer, my garden yields an abundance of fresh green beans, often called string beans, and I’m always eager to turn them into something extraordinary. This recipe is my absolute favorite way to highlight their natural crispness and vibrant flavor. While fresh green beans are always my first choice, this versatile recipe also works wonderfully with frozen or even doctored-up canned green beans, ensuring you can enjoy Nana’s flavor any time of year.
For those times when a longer, slower cook is desired, we also love making a similar version of these green beans in the slow cooker. The slow cooker method deepens the flavors even further, creating an incredibly tender and rich side dish with minimal effort.

Adding Potatoes: A Hearty Twist to Your Green Beans
You might have noticed that in my slow cooker green bean recipe, I often include potatoes. This is a delightful tradition Nana herself would practice occasionally, and it’s one I wholeheartedly embrace. The addition of potatoes brings a wonderful additional layer of flavor and texture, turning a simple side into a more substantial and satisfying dish. They absorb all the savory goodness from the bacon drippings and chicken broth, becoming incredibly tender and flavorful. Plus, adding potatoes is a clever way to stretch the dish further when you’re feeding a larger crowd.
For this stove-top version, you can absolutely add potatoes! A single russet potato, diced into bite-sized pieces, is all you need. Simply stir it in with the green beans, ensuring it’s coated in the delicious bacon drippings, and let it cook alongside the beans until fork-tender. This simple tweak makes the green beans even more wholesome and comforting.
Simple Ingredients for Extraordinary Flavor
The beauty of Nana’s green bean recipe lies in its simplicity. You only need a handful of everyday ingredients, each playing a crucial role in building the dish’s incredible depth of flavor. Don’t be tempted to leave any of them out, as their combination is what makes these green beans truly legendary!
- Fresh Green Beans: The star of the show. Look for crisp, vibrant green beans. While fresh is always best, frozen green beans can be used in a pinch, or even canned green beans can be “doctored up” using this method for a quick solution.
- Bacon: This is where much of the magic happens. The bacon not only provides a savory, smoky flavor but also renders delicious fat (drippings) that infuse every single bean.
- Onion: Diced yellow onion adds a subtle sweetness and aromatic depth that complements the bacon beautifully. As it caramelizes slightly in the bacon drippings, it becomes incredibly flavorful.
- Chicken Broth or Water: Chicken broth or stock is highly recommended for an extra layer of savory flavor, but water works just fine if that’s what you have on hand. This liquid creates steam, helping to tenderize the beans and meld all the flavors together.
- Salt and Pepper: Essential for seasoning to taste. Remember that bacon is salty, so always taste before adding extra salt.

To this day, Nana’s Green Beans are a frequent request in my family and are enjoyed throughout the year. They are an absolute must-have for my sister’s birthday dinner, a non-negotiable side at our Thanksgiving and Christmas feasts, and a welcome addition any other time fresh green beans are available. Their versatility and universally loved flavor make them perfect for any occasion, big or small.

What Makes These Green Beans the Absolute Best?
The secret to these exceptional green beans lies in the patient cooking process and the incredible flavor contribution of the bacon and onions. Unlike quick-steamed green beans, these are gently simmered with savory bacon and aromatic onions for an extended period. This slow cooking allows the green beans to become incredibly tender, almost melting in your mouth, while absorbing every drop of the rich, smoky bacon drippings and the sweet notes from the caramelized onions. The result is a depth of flavor that is simply unparalleled.
Green bean recipes with bacon are hands down the BEST because the smokiness of the bacon adds a complex, irresistible dimension to the dish. It’s not just a garnish; it’s an integral part of the flavor profile, transforming plain green beans into a truly decadent side. Honestly, these green beans are so good that they often feel more like a treat than a vegetable! We frequently serve a “real” vegetable or a fresh salad alongside these green beans because they are just too delicious to count as our sole green offering. You can bet your bottom dollar Nana’s Green Beans will be gracing our Thanksgiving table and again at Christmas this year, as they do every single year.

Tips for Perfect Nana’s Green Beans Every Time
- Choose Your Beans Wisely: While fresh green beans offer the best texture and flavor, frozen green beans are a great alternative. If using frozen, you can add them directly to the pot; they might need slightly less cooking time. If using canned, drain them well and cook for a shorter duration, mainly focusing on infusing the bacon flavor.
- Don’t Skimp on the Bacon Grease: This is non-negotiable for Nana’s recipe! The rendered bacon fat is essential for cooking the onions and coating the green beans, building the foundational flavor of the dish.
- Low and Slow is Key: The magic happens during the long, low simmer. This allows the beans to break down and become incredibly tender, soaking up all the delicious juices. Don’t rush this step!
- Stir Occasionally: This prevents scorching and ensures all beans are evenly coated and tenderized.
- Adjust Cooking Time for Texture: If you prefer your green beans with a bit more bite (al dente), you can reduce the cooking time to 30-45 minutes. For Nana’s truly tender, melt-in-your-mouth experience, aim for the 1.5 to 2-hour mark.
- Season to Taste: Bacon is inherently salty. Add black pepper generously and then taste before adding any extra salt. You might find it doesn’t need much, if any, additional salt.
- Keep an Eye on the Liquid: Make sure there’s always a small amount of liquid at the bottom of the pot to prevent the beans from sticking and burning. Add a splash more broth or water if it gets too dry.
Serving Suggestions & Make-Ahead Tips
These savory green beans are incredibly versatile and complement a wide array of main dishes. Beyond the classic chicken fried steak, consider serving them alongside roasted chicken, glazed ham, pork loin, or even a simple grilled salmon. They’re hearty enough to stand on their own as a light vegetarian meal (if omitting the bacon for some portions) or a star side dish at any potluck.
This recipe is also a fantastic make-ahead option. You can prepare Nana’s Green Beans a day or two in advance and store them in an airtight container in the refrigerator. To reheat, gently warm them on the stovetop over low heat, adding a splash of chicken broth if needed to restore moisture. The flavors often deepen beautifully overnight!

My Nana’s Famous Green Beans
My Nana’s Famous Green Beans! One of the most requested recipes from my family – year-round! Made with just a handful of ingredients, this easy green bean recipe makes a delicious addition to any meal!
Ingredients
- 6 slices of bacon
- 2 pounds of rinsed and trimmed fresh green beans
- 1/2 cup diced yellow onion
- 1 1/2 cups chicken broth or water
- Salt and pepper to taste (I usually don’t add much salt because the bacon is plenty salty)
Instructions
- Cut the bacon into small pieces and cook over medium heat in a heavy 3-quart saucepan until the bacon is fully rendered and crispy.
- IMPORTANT: DO NOT remove any of the bacon grease – it’s what makes these green beans so amazing!
- Add the diced onions to the pan with the bacon and drippings. Sauté until the onions are transparent and softened, about 5-7 minutes.
- Stir in the trimmed green beans and a generous amount of black pepper. Ensure the green beans are well coated with the bacon drippings and onions.
- Pour in the chicken broth (or water). Bring the mixture to a gentle simmer, then reduce the heat to low.
- Cover the saucepan and continue cooking the green beans for 30 minutes to up to two hours, stirring occasionally. The longer they cook, the more tender and flavorful they will become. Make sure there is always some liquid at the bottom of your pot to prevent the beans from scorching; add a splash more broth or water if needed.
- After cooking, check for seasoning levels. Add additional salt and pepper if necessary, keeping in mind the saltiness from the bacon.
- Serve hot and enjoy the incredible flavors of Nana’s Famous Green Beans!
