The Irresistible Charm of Funfetti Rice Krispies Treats Fruit Kabobs

I absolutely adore these fruit kabobs, and I’m confident you will too! They are incredibly enjoyable to prepare, and the end result is simply stunning. My boys and I initially whipped these up for an afternoon snack, but their charm and versatility make them ideal for a wide array of occasions. Picture them as the star of your next brunch, a sweet addition to a Mother’s Day spread, a festive treat for Easter gatherings, or simply a fun surprise any day of the week.

In fact, my youngest, Reece, firmly believes these kabobs are perfectly acceptable for breakfast. And when you think about it, a combination of classic Rice Krispies cereal and fresh fruit certainly sounds like a balanced and delightful way to start the day. Who could argue with that?

What truly elevates these treats from good to utterly magical are the sprinkles. I genuinely believe sprinkles possess a special kind of enchantment; they have the power to make everything better, especially homemade Rice Krispies® treats! Adding a shower of rainbow sprinkles transforms an ordinary confection into an instant party, bringing a burst of color and joy that’s simply contagious. It’s like bottling pure fun and sprinkling it generously over your dessert!

A Fun and Engaging Activity for All Ages

One of the many reasons I cherish making Rice Krispies® treats with my boys is the fantastic opportunity it provides for them to actively participate in the kitchen. It’s a simple, no-bake recipe that allows even little hands to get involved safely. This time, we took the fun a step further. After pressing the warm, gooey mixture into a pan, we pulled out an assortment of our favorite cookie cutters. The boys loved pressing out fun shapes like hearts, stars, and even little dinosaurs, turning a simple snack into a creative adventure. This step not only adds to the visual appeal of the kabobs but also makes the entire process incredibly memorable for them.

Selecting the Perfect Fruit for Your Kabobs

Once our delightful Rice Krispies® treats were cooled and cut, it was time to add the fresh, vibrant fruit. This is where you can truly let your imagination—and your taste buds—run wild! While you can use virtually any fruit you desire, we opted for a colorful combination of sweet strawberries, tangy pineapple, bright green kiwi, and succulent blackberries. The array of colors and textures creates an eye-catching display that’s hard to resist.

Other fantastic options that would be equally delicious include plump red or green grapes, refreshing watermelon chunks, juicy blueberries, or even slices of ripe mango. When choosing your fruit, a key consideration is its moisture content, especially if you plan on preparing these kabobs ahead of time. Fruits like watermelon or very ripe berries can release a lot of liquid, potentially making your Rice Krispies treats soggy if left assembled for too long. For best results, select firm, ripe fruits and, if making them in advance, consider assembling closer to serving time or having the fruit and treats ready to skewer. You want crisp, delightful treats, not soggy ones!

A Treat You’ll Want to Make Again and Again

After we finished assembling our first batch of these amazing kabobs, my other son, Bryce, eagerly asked if we could have them every single day. While indulging in such a sweet treat daily might be pushing it, his enthusiasm perfectly captures just how incredibly satisfying and enjoyable these kabobs are. Rest assured, they’ll definitely be making an encore appearance in our kitchen very, very soon!

I am constantly on the lookout for fun, simple, and engaging snack ideas for the boys. And if I’m feeling particularly generous (and they’re lucky!), I let them dive right into the making process. This brilliant concept for fruit kabobs, combining our beloved Rice Krispies Treats with fresh fruit, was inspired by the endless creativity found on the Rice Krispies® Pinterest page. Many of their recipes are specifically designed to be easy, making them perfect for little helpers in the kitchen. Tips for Perfect Fruit and Rice Krispies Treat Kabobs

  • Cookie Cutter Fun: Don’t limit yourself to basic squares! Heart, star, and animal-shaped cookie cutters add an extra layer of visual appeal and make these kabobs even more exciting for children. Lightly grease your cookie cutters before using them to prevent sticking.
  • Fruit Variety: Experiment with different fruit combinations. Consider seasonal fruits for the freshest flavors. Berries, melon, kiwi, pineapple, and grapes are all excellent choices. For a festive touch, use red and green fruits for Christmas, or pastel colors for Easter.
  • Preventing Stickiness: When pressing the Rice Krispies treat mixture into the pan, use a piece of wax paper or parchment paper, or lightly butter your hands, to avoid stickiness.
  • Skewers: If serving younger children, consider using shorter skewers or even blunt-tipped popsicle sticks for safety. For a more elegant presentation, try metal skewers.
  • Storage: These kabobs are best enjoyed fresh. If you need to store them, cover loosely with plastic wrap and refrigerate for up to a day. Be mindful of fruits that brown quickly, like apples, or those that release a lot of moisture.
  • Make Ahead Components: The Rice Krispies Treats can be made a day in advance and stored in an airtight container at room temperature. The fruit can be washed and cut ahead of time and stored in separate containers in the refrigerator. Assemble the kabobs just before serving for optimal freshness.

These Funfetti Rice Krispies Treats Fruit Kabobs are more than just a recipe; they are an invitation to create, share, and enjoy moments of pure, simple joy. They are a testament to how a few basic ingredients, a dash of sprinkles, and some fresh fruit can transform into an extraordinary treat. So gather your ingredients, enlist your little helpers, and get ready to create some delicious memories!

Ingredients

  • 3 tbsp butter
  • 10 oz marshmallows 1 package
  • 6 cups Rice Krispies® cereal
  • 1/4 cup rainbow colored sprinkles
  • Assorted fresh fruit
  • Wooden skewers

Instructions

  • Prepare a 9×13 inch baking pan by lightly spraying it with non-stick cooking spray or greasing it with butter.
  • In a large saucepan, melt the butter over low heat. Ensure the heat is low to prevent the butter from browning.
  • Add the marshmallows to the melted butter and stir continuously until they are completely melted and smooth. Immediately remove the saucepan from the heat once melted.
  • Pour in the Rice Krispies® cereal and stir gently but thoroughly until the cereal is evenly coated with the marshmallow mixture.
  • Gently fold in the rainbow sprinkles. Be careful not to overmix, as this can cause the colors to bleed.
  • Transfer the mixture to the prepared 9×13 inch pan. Using a buttered spatula or wax paper, press the mixture evenly into the pan. Allow it to cool completely at room temperature for at least 30 minutes.
  • Once cooled, cut the Rice Krispies® treats into uniform squares, or use fun cookie cutters to create various shapes.
  • Wash and cut your chosen fresh fruit into pieces that are roughly similar in size to your Rice Krispies treats, making them easy to skewer.
  • Carefully thread the Rice Krispies® treats and fruit pieces onto the wooden skewers, alternating for a colorful and appealing pattern.
  • Serve your Funfetti Rice Krispies Treats Fruit Kabobs immediately for the best taste and texture. Enjoy!
